Irish Potatoes

Once you make these cinnamon-coconut creations, the savory misnomer will be obvious because of their appearance. One of my lovely friends from high school has passed down this recipe through most of the matriarchs in her family, and I would devour half of the tupperware container she'd bring to lunch every St. Patrick's Day. She sent the recipe over for me to share with you on this festively green, whiskey-laced Irish holiday! I assume most of you will need a sweet bite to balance out those Irish coffees and pints of Guinness all weekend long. Makes 24 pieces.

  1. In a mixing bowl, combine the cream cheese and confectioner's sugar until thoroughly mixed.
  2. Add in the coconut flakes, mixing until combined. Pour in the vanilla extract and sprinkle in the salt, then stir with a spoon.
  3. Once the mixture is cohesive, place in the refrigerator to slightly chill, about 30 minutes. This will make it easier to roll into balls and prevent from sticking.
  4. Place the cinnamon in a small bowl. 
  5. Remove the chilled coconut mixture from the fridge, and using your hands, roll tablespoonful sizes into balls.
  6. Placing one ball at a time in the bowl with the cinnamon, carefully roll each one until coated on all sizes. Serve immediately or chill in the refrigerator until ready to share.
