Mocha Brownies with Coffee Dulce de Leche Glaze

This week is all about baked goods. It's winter, I finished the Whole30 last month, and my sweet tooth deserves some attention. Breakfast of champions, well those that prefer a pastry at the crack of dawn, like myself. A splash of strong coffee both in the brownie batter and the icing gives this batch of brownies a pleasant caffeinated kick that's not just playing the role of enhancing the chocolate flavor. The dulce de leche in the icing makes the texture smooth and incredibly addictive. I entered these in the Food52 "Your Best Recipe Made with Coffee," because I think they're pretty scrumptious. Makes 12 brownies.

For the brownies:

  1. Set the oven at 350 degreess. Butter and line an 8-inch square baking dish with parchment paper, set aside until ready to use.
  2. In a small bowl over a double boiler, combine 4 oz. of the chocolate chunks with the butter. Whisk over medium heat until the chocolate has melted and yields a smooth consistency, about 8 minutes. Set aside.
  3. In a small mixing bowl, combine the flour, cocoa powder, and 2 tsp. of instant espresso, then stir to combine.
  4. In a separate large bowl, whisk together the granulated sugar and the eggs until pale yellow and frothy, about 5 minutes. Whisk in 2 tbsp. of strong coffee and vanilla extract.
  5. Add the dry ingredients to the wet ingredients and the remaining chocolate chunks. Gently with a spatula, fold these ingredients just until incorporated. Do not overmix. 
  6. Transfer batter to the prepared pan, sprinkle with flaky sea salt, and transfer to center rack in the oven. Bake for about 30 minutes or until toothpick inserted in the center comes out clean. Transfer to a wire rack to cool slightly, then top with glaze recipe.

For the glaze: 

  1. In a mixing bowl, stir together the confectioner's sugar and remaining instant espresso. Whisk in remaining ingredients: milk, last 3 tbsp. of strong coffee, dulce de leche, and a pinch of salt.
  2. Continue to whisk until a smooth consistency, then spread over the cooled brownies. Allow to set before slicing into even squares [if you can wait that long], then devour!
